I picked up a long french baguette from the bakery, and sliced it into medium sub sized pieces, the sliced in half. I layered some chicken (the original sandwich had turkey deli meat, but I didn't have any of that... I think some leftover carved turkey breast from Thanksgiving would go great in these!), slices of brie, and slices of granny smith apple. I popped sandwich (open faced) in the toaster oven to broil for a few minutes, until the bread started to brown and the brie melted a bit.
YUM! The chicken I had cooked the night before on the stove, just with salt and pepper, and it was a little to peppery for me, but my husband loved it. I can't wait for leftover turkey at thanksgiving to make this again!
What a FABULOUS idea!!!! See...now I feel bad even USING my brie b/c your recipes are so great! That...and now I want this sandwich! mmmm...
ReplyDeleteI looooove this combo - it is indeed great with leftover thanksgiving turkey! The granny smith is key... something about the tartness of the apple and the creaminess of the brie. I'm making myself hungry just thinking about it! I usually put on some cranberry sauce and mayo and make it a panini on sourdough.

ReplyDeleteA great addition would be honeycup mustard - had it on a similar sandwich from Whole Foods and it was so fabulous I had to order it online (just google it) before I'd even finished the sandwich! It's a slightly sweet honey mustard with a horseradish-like kick.
